Sauvignon Blanc from 15 year-old estate vines, planted on the profound clay-limestone soils of Raphäel St-Cyr's native Pierres Dorées. Direct press, fermented in neutral oak barrels with native yeasts. Aged entirely in those same barrels on full lees for two years. Unfined, unfiltered, no SO2 added.
A grand white wine, reminding one of the most excellent examples from central France - old-school Dageneau, a more natural François Cotat. Only 2000 bottles produced.
Sauvage Blanc presents a powerful nose with notes of dried fruit and spices. On the palate, it offers superb volume balanced by a beautiful verticality and mineral tension, showcasing a full-bodied character crafted for gastronomy.
This wine pairs wonderfully with seafood dishes, cheese boards, and herb-forward cuisine, making it a versatile choice for various culinary experiences.
