The wine presents aromas of white and yellow fruits, particularly pear and peach, with a fine balance of dryness and a hint of richness.
A blend from mostly 30-year-old Chenin Blanc vines sourced from different parcels (see vineyard map). Aged in fiberglass tanks, followed by an additional six months in foudre.
On the palate, it is dense yet focused, with a savory character that transitions from oxidative to reductive notes. It features a salivating finish with flavors reminiscent of juicy pear and stony accents.
The wine also exhibits smoke-like reduction initially, which evolves to reveal bruised apple and spice-laden aromatics.
Best paired with seafood, soft cheeses, and white meats. Ideal matches include oysters, grilled fish, goat cheese, charcuterie, and risotto, serving chilled to highlight its crisp acidity.
