Domaine Rougeot - Bourgogne Cote d'Or Rouge 'Les Vaux' San Soufre 2023

Sourced from 60-year-old “les Vaux” vineyard grown on clay-limestone soils located in Meursault.  Hand-harvested and vinified 100& whole cluster with natural yeast and no sulfur during vinification or elevage.  Fermentation occurs in concrete tanks with 15-18 days maceration and 1-2 pump overs per day.  Aging in oak barrels for 8-10 months on the fine lees.  Bottled unfined and unfiltered and without added SO2.

Red berries, cherry, wild strawberry / forest fruit.  Floral notes: violet / light florality. Earth, forest floor and mineral undertones.

Medium bodied, food pairings, include roasted or grilled duck, Coq au vin or other classic Burgundy-style poultry, mushroom-based dishes, milder red meats, soft to medium cheeses.
