Shochu is a Japanese traditional hard liquor, distilled spirits made from grains and vegetables. The most common base ingredients are sweet potato, barley, rice, buckwheat and sugar cane.
Hamada Syuzou's Daiyame is a premium Japanese sweet potato shochu. The distillery uses a unique "koujuku" aging method for the sweet potatoes, which helps bring out intense, fruity aromas of lychee, muscat grape, and rosewater.
The shochu is distilled using a vacuum distillation process, which preserves the fresh, aromatic flavors. It is made from 84% sweet potato and 16% black koji rice.
It can be enjoyed neat, on the rocks, with soda water, or in cocktails.
