Les Vins Pirouettes by Binner & Compagnie - Eros By David 2023

“Les Vins Pirouettes” is a collective project launched by Christian Binner, the renowned Alsatian winemaker (part of our book, of course), who’s been making legendary zero-zero wines in his Ammerschwihr winery for more than 20 years. Saddened by the sight of organic and biodynamic grapes being sold for little to cooperatives, Christian decided to encourage these growers to make wine under their proper name instead, thus promoting the idea of soulful terroir wines made with zero nonsense both in the vineyard and the cellar. 

Fun fact: David plays classical music continuously in his cellar during vinification.

Expect a bright, citrus-forward nose carrying grapefruit, lemon, and peach, with floral hints such as jasmine. Subtle spice may underscore the fruit, with a faint aromatic sweetness from Gewurztraminer and Muscat.

Flavors: Juicy peach, apricot, green apple, and lemon, elevated by an aromatic perfume note.

Lively acidity keeps the palate crisp and refreshing. Light-bodied with a dry but approachable finish.

Skin contact provides a subtle tannic grip and minerality, though the 7 day maceration (as opposed to longer fermentations used for other Eros cuvées) tends to yield a smoother, more approachable texture.
