Driven by vibrant citrus blossom, green apple, quince, white peach, wild mountain herbs, and a distinctive smoky, wet-stone slate minerality. Hints of natural yeast and fermentation perfume add rustic complexity.

Light-bodied and finely etched. It features raw, bracing acidity juxtaposed against a very delicate, balanced off-dry sweetness (often tasting closer to a dry Feinherb style).

Pair with spicy dishes, seafood, pork, poultry, and cheese.
